Identity, territory and memory are the essence of the gastronomic trip proposed by chef Marcos Tavío. A trip rooted to the culture and history of the Canary archipelago, related to his homeland and the local product that enables the diner to go down the eight islands through their flavours, aromas, touches and sounds.

To immerse yourself in the fascinating history of this archipelago through its gastronomy, Aborigen offers two tasting menus: Microclimates and Currents, with 13 steps, and Territories, with 11.
In turn, we offer a tapas format menu based on the tasting menu with some of the most representative dishes of Aborigen’s journey.
